i was planning to bake a sweet potato pie for a friend's birthday. i don't have much experience with pies (or sweet potatoes), so i did a trial run last week.
boil 1lb sweet potatoes 40-50 min |
rinse with cold water and the skin peels right off |
smash with a pastry blender |
add a stick of butter |
beat well |
next add milk, eggs, sugar, and spices |
mix until smooth |
pour into unbaked pie crust |
make sure it's smooth on top and stick it in the oven |
first i should state that i loathe sweet potatoes. however, i enjoyed this pie (with a dollop of cool hwhip, naturally). i used a frozen pre-made pie crust, and i forgot to cover the edges with foil so they got a little over done. i might use brown sugar instead of white, and add a little flour to thicken up the batter if i ever make this again. but overall this pie was smashing.

ingredients
1lb sweet potato(es)
1/2 lb butter ( 1 stick), softened
1 cup sugar
1/2 cup milk
2 eggs
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 9-in unbaked pie crust (if frozen, thaw first)
method
boil sweet potato(es) 40-50 min. run under cool water and you'll be able to peel the skin off easily with your hands. place in a bowl and mash with a fork or pastry blender.
add butter and mix well
add remaining ingredients and mix on medium until smooth
pour into pie crust
bake at 350 for 55-60 min

ReplyDeleteIt really looks amazing, but I imagine that it tastes the same as pumpkin pie. I kind of detest pumpkin pie...IS it the same?
ReplyDeletenot the same! promise. i do like pumpkin, and i hate sweet potatoes. this pie triggers my gag reflex, whereas pumpkin does not. it does taste similar- i'll give you that - probably because similar spices are also used in pumpkin pie. my guess is that if you like sweet potatoes, you will like this. i even liked it once i got past the gag part! (...i'm not crazy)
