this is a great dish to eat if you suffer from a stuffy nose.
it's so spicy it'll clear up your nasal passages in no time!
start by placing 1 cup long grain white rice in a medium saucepan
add 2 cups water
bring to a boil. reduce heat to low, cover and cook 20 minutes
in the meantime, thaw, rinse, and drain 2 lbs frozen shrimp...
mince 4 cloves garlic...
grab a can of chipotle chiles in adobo sauce
remove four peppers, and mince finely
when there's about 10 minutes left on the rice timer, melt 1/2 cup butter in a large saucepan
add garlic, and cook about 30 seconds
stir in 1/2 cup red wine
{what you do with the rest is completely up to you}
add 3 tbsp worcestershire sauce
add your minced chipotle peppers
and about 2 tsp salt
stir well
add the shrimp
cook 1-2 minutes, just long enough to heat through.
you don't want to leave in in too long, or the shrimp will get tough
serve over your rice
feel free to grab some of the extra sauce
and spoon some over to soak into your rice
this is one of my favorite dishes to make.
it's super easy and it gives me an excuse to finish off a bottle of wine.
although i think i'll try to make this with white wine next time.
p.s. the chipotle chiles in adobo sauce can be found in the international foods aisle of your supermarket. it's a small can. i usually buy goya brand (some stores have a whole goya section), but la conteƱa was all my store had. some cans say it in spanish. in that case it will read "chiles chipotles adobados."
chipotle shrimp.
ingredients
1 cup long grain white rice

3 tbsp worcestershire sauce
4 tbsp chipotle peppers in adobo sauce, finely minced
2 tsp salt
2-3 lb medium frozen shrimp. thawed and dried off
OR
2-3 lb raw shrimp, rinsed
method
place rice and water in a medium saucepan. bring to a boil. reduce heat to low, cover and cook 20 minutes
when there's 10 minutes left on the rice, melt butter in a large skillet or wok.
add garlic and cook about 30 seconds.
add remaining ingredients and mix well before adding shrimp.
cook shrimp in mixture 1-2 minutes, until heated through.
(if using raw shrimp, cook for 5-7 minutes, or until opaque)
serve over cooked rice.
